Halloween Food Fun

This is it.  I have truly gone over the edge.  But I can’t help it!  I get a kick out of being creative with food, and having a bit of Halloween fun makes me happy. 🎃 I share this with you purely for the fun of it.  These two recipes are not what I would call “amazing” from a flavor perspective, and they take a stupid amount of time, but if you’d like to play along with me, I will share how I did it.  Let’s have a bit of fun – because life needs more fun/frivolity/silliness/art-for-art’s-sake, yeah?

Sweet Potato/Apple Butter Jack-o-lanterns     By http://www.wendisaipkitchen.com

  • 1 very fat sweet potato
  • 1/4 C. EDEN ORGANIC APPLE BUTTER*
  • 1/2 t. cinnamon
  • 1/2 t. molasses
  • 1/4 t. ground cloves
  • Melted coconut oil for brushing
  • Sea salt for sprinkling

(*Note: I’m being specific about the brand of apple butter because the ingredients are only organic apples and organic apple juice concentrate.  I found mine at Whole Foods, but I’ve included the link if you want to order.)

  1. Pre-heat oven to 400 degrees.  Wash sweet potato, but don’t bother peeling it.  Cut twelve 1/4” slices that are big enough to accommodate a cookie cutter.  TIP: if you cut slightly on the diagonal, you’ll get a wider slice.
  2. Spread slices on a plate, and microwave for one minute.  This makes them soft enough to carve.
  3. Choose six of the best slices to be the tops, and carve faces in them, or use teeny fondant/dough cutters as I have done here.  (See?  I told you I went over the top!)
  4. Mix together apple butter, cinnamon, molasses, and ground cloves.  Spread apple butter mixture on a bottom slice, top with a face, and place on a rack on a roasting sheet.  Repeat for the rest of the slices so that you have six jack-o-lanterns.
  5. Brush with oil.  Sprinkle with salt.  Bake for ten minutes.  Serve warm with the leftover apple butter mixture.

Jicama/Guacamole Ghosts      By http://www.wendisaipkitchen.com

  • 1 very fat jicama
  • 1 avocado
  • Juiced lime, to taste
  • Sea salt, to taste
  • Black olive slices
  1. Slice jicama into 12 thin slices approximately 1/4” thick.  Using a ghost cookie cutter, cut a ghost shape out of each slice.
  2. Cut the avocado in half, remove the pit, scoop out the flesh and place in a bowl.  Add lime juice and sea salt.  Mash it all together with a fork.
  3. Spread some guac on a ghost.  Place another ghost shape on top.  Repeat for all shapes until you have six ghost sandwiches.
  4. Cut olive slices into eyes and smiles.  Glue them onto the shapes with a dab of guac. TIP: you can poke a small hole in the corner of a zip top bag, put some guac in the bag and pipe it onto the ghost to glue the olive pieces.  (Yes.  I have gone completely mad.  This takes so much time!  But we’re doing it for the joy of it!  😁)
  5. Serve these immediately with the leftover guacamole.

D3BBE0DF-FB9F-4799-A872-4A71B6B30545There you have it.  I highly recommend doing this only for your family, and not for a Halloween party because, seriously.  You’re going to have enough stress on you without trying to glue tiny black olive eyes onto a jicama ghost with piped guacamole!  🤣

    I love these and I plan on giving them a try. I just wanted to mention that it is easy to make apple butter (0vernight) in the crock pot. Easy and very tasty. Thanks for this.

    • Hi, Kim! Since I was already spending waaaaay too much time on these, I just decided to buy the apple butter. 😂 But, yes, I believe homemade is best. Depending on how you make it, you may not need extra molasses, or spices. Do whatever works for you! Happy Halloweeeeeeeen! 🎃
