So I heard there’s some big football game coming soon… 😁  I grew up in a household where football was a very big deal.  No, not for me.  I was the music geek practicing my piano in the other room!  Nevertheless, since we were all supportive of each other’s activities, I had to learn football, and I HAD to be a Green Bay Packer fan.  It was a requirement.  🏈

Whether you are more interested in what’s happening on the field, or what’s happening in the big ticket commercials, you’re probably going to want some game day food.  There is zero reason not to have party food on the AIP!  Today, I’m sharing with you my recipe for super guacamole, a.k.a. Supah Guac (because that’s more fun to say).  This is party food that’s actually good for you!  It’s loaded with nutrients, freshness and flavor.  You can scoop it with plantain chips, cassava chips, or, if you’ve made certain reintroductions, Siete Sea Salt Tortilla Chips, which can typically be found at Whole Foods.  (I’m including a link here so you can have a visual for the packaging.)

Supah Guac is a nutrient-dense version of the classic – full of other veg besides just avocado and lime!

Ingredients

  • 2 ripe avocados, pitted and scooped out

  • 1/4 C. grated zucchini

  • 2 T. finely chopped red onion

  • 2 T. finely grated carrots

  • 2 T. freshly squeezed lime juice

  • 2 T. chopped cilantro

  • 3 cloves garlic, minced

  • 1/4 – 1/2 sea salt (to taste)

Directions

  • In a medium bowl, mash avocados with a fork.  Stir in the rest of the ingredients except the salt.
  • Starting with 1/4 teaspoon salt, stir in and taste.  Adjust salt, and taste until you reach your desired saltiness.
