Do you ever notice that when you get watermelon, you usually have a LOT left over? This is what happens at my house.
I decided that I wanted to find a different way to serve watermelon, other than the typical wedges. I love the cool, refreshing taste of it. It’s often the perfect counterpoint to whatever we may be grilling in the summer. I’ve had watermelon with mint before, and really enjoyed the combination of flavors. I’ve also seen people salt their melon. It wasn’t too much of a jump, then, for me to put together a sweet and savory salad of it.
This recipe has only five ingredients. It’s also super simple to make (hence the name), making it a welcome addition to the AIPer’s repertoire. It’s also one of those recipes that doesn’t require a visit to Amazon for the ingredients. All ingredients are readily available. Yay!

This Simple Watermelon Salad is a unique way to use watermelon. It is both sweet and savory. Ridiculously easy, too!
6 cups chopped, seedless watermelon
1/4 cup chopped mint
2 TBSP avocado oil
2 TBSP lime juice
1/2 tsp sea salt
- In a large bowl, gently combine watermelon and mint.
- Separately, whisk together avocado oil, lime juice and salt.
- Pour over the watermelon, and combine all. Serve cold or room temperature.
