This Bright Cucumber Salad (AIP/Paleo) gets its breeziness from fresh mint and dill. It is the perfect side dish for grilling season meals!
Ladies and gentlemen! I hereby declare that grilling season is here! 🥳(This, despite the fact that some parts of the country have experienced SNOW this week. What the heck?!)
“But,” you say, “this is obviously not something grilled, Wendi.” You would be speaking the truth. I’m showcasing this salad for a couple of reasons:
- Cukes are in season, which is better for you and your wallet.
- You need a side dish to go with your grilling.
- You need something to wake up your mouth.
- Food supply is inconsistent right now, and these are ingredients I could easily find for recipe development!
I have a few recipes that would be fantastic with this salad. Lamb Mint Meatballs with Tzatziki Sauce immediately come to mind. But maybe you’d like some chicken? Hmm. How about Margarita Chicken? (Don’t worry. It’s tequila free! 😉) If you want to go totally off-road, try Blueberry BBQ Bison Burgers!
I tell you WHUT. The whole grocery shopping, menu planning, and cooking thing is weird right now. We have food supply inconsistency, and food prices are rising. I used to make a menu, and plan the recipes I was going to develop, then go shopping. I do the exact opposite now. To work with this situation, I’m trying to think in terms of what is in season right now. (Hence, cucumbers.) And that is a really excellent thing right now.
