The cuisine I probably miss the most after eliminating nightshades from my diet is Mexican food. (Ok, Italian food, too.) If you’ve been a friend of this blog for any amount of time, you have probably heard me talk about how my love of Mexican food came from my years in Arizona, where authentic Mexican food was always within arm’s reach. Oh, those were good times…

*stares wistfully into space in nostalgic remembrance

Anyway, there are flavors in Mexican food that we can utilize that don’t involve the typical inflammatory nightshades found in salsa (e.g. tomatoes and hot peppers). Red and green onions add punch. Cilantro adds its own unique flavor. Lime juice and salt can make you feel like you’re eating salsa with a margarita. Well, almost.

Serving suggestions

The first thing that pops into my mind to go with this recipe is Margarita Chicken, a chicken main dish that tastes like you dunked it in your margarita! Or perhaps you could put this salsa in tacos made with Gordita Tortillas. It goes particularly well with seafood and white fish, too.

Of course, you can dip in your favorite chip, like cassava chips, or plantain chips. Or make your own chips with my recipe for Corn-free Tortilla Chips!

This Peach Salsa (Paleo/AIP) is the perfect way to use summer peaches! Great alternative for people who are sensitive to nightshades.

Ingredients

  • 1 cup diced fresh peaches

  • 2 TBSP finely chopped red onion

  • 1/4 cup chopped cilantro

  • 1 TBSP extra virgin olive oil

  • 1 TBSP fresh lime juice

  • 1 TBSP finely chopped green onion

  • 1/4 tsp sea salt, or to taste

Directions

  • Mix all ingredients in a bowl. Let sit at room temperature for 10 minutes to let the flavors blend.
