🌟NEW RECIPE!!!🌟 Asian Chicken Rainbow Carrot "Pasta" is a flavorful dish that PROVES you don't need gluten or dairy to get some flavuh-flave! Ribbon curls of rainbow carrots are the pasta. Of course, you can sub regular carrots, but where's the fun in that? 😁
The sauce has notes of coconut milk, lime juice, fish sauce, ginger and turmeric - kinda like an AIP pad thai. Kinda.
Have you ever tried carrot ribbons as pasta? I love 'em! I've gotten to the point where I actually prefer vegetable curls and shreds to pasta. I never in a million years guessed that would happen, but over time, my tastes have changed toward things that are more nutrient dense. I guess that's something.

🇺🇸 Here's something for your 4th of July celebration, especially if you have littles around: Chicken Tenders! 😀 Of course these are gluten free and AIP. (FYI, they also happen to be delicious dunked in my AIP Ranch Dressing!)
The crunch on the outside is from crushed plantain chips. (I recommend @terrachips .) Très yummy!!! 😋

Hey, everybody! If you've been part of the AIP community for any amount of time, you know that most of us bloggers follow the AIP as laid out by Dr. Sarah Ballantyne. ( @drsarahballantyne ) Her site has been a casualty of a 3rd party ransomware attack, and she's in the unfortunate position of having to completely rebuild her entire site! 😳

Cold Cucumber Souuuup! 😋 I know it might sound strange to have a cold soup, but hear my out. You don't want to heat up your kitchen, you make it in your blender rather than on the stove, and it's DELICIOUS!
Bonus for those of us who don't do well on coconut: there's no coconut in here, yet it's as creamy as can be! Woo hoo! 🥳

👔 If your favorite dad is a meat-eater, make this Marinated Flank Steak for Father's Day! The savory flavor comes from the marinade - notes of ginger, garlic and coconut aminos. (My favorite brand is @bigtreefarmsbali .) Start it early, though, because the marinade needs time to do its thing.
You can cook this on the grill (my favorite way), but you could also broil it, if grilling isn't your thing. Whatever way you decide to cook it, I hope you'll enjoy it! 😀

🍉You need this Watermelon Limeade! 🍉 OK, I do. Temps are at or near 100º with a big ol' layer of southern humidity on top! Yeesh! 🥵
🍉Lucky for us, watermelon is plentiful right now, so we can make a refreshing treat and stay hydrated at the same time. And if you have a LOT of it, having a drink recipe in your back pocket is a very good thing. All you need is a good blender. 🙂

🌟NEW RECIPE!!!🌟 Teriyaki Portobello Cutlets are a great dish to have when you feel like skipping the meat, or you want a substantial side. You could serve them on cauli rice (or white rice, if successfully reintroduced) with some of the sauce drizzled on top. Or with sautéed greens and some fruit. There are many applications here!
If you are a fan of the fungus like I am, you gotta try 'em! If you are not, I hope you will keep trying because they are suuuuper good for your gut microbiome - so good that @thepaleomom says they should be their own food group for us AIPers!
