Falling-off-the-bone Crockpot Chicken is a recipe to set and forget, yielding lots of shredded or chopped chicken for any number of uses!
There are a few core recipes that will become your friends on the AIP. This is one of them. It is always good to have a protein source (in this case, shredded chicken) handy for making soups, salads, or just “as is” on your plate.
My favorite thing about this recipe is that it continues into the recipe for The Richest Bone Broth (AIP). I mean, where in the world would we be without our bone broth??? Whether you sip it in a mug, use it in a sauce, or make a soup out of it, bone broth is essential on the AIP. (That is my humble opinion.)
Crockpot options
It probably goes without saying that you will need a good crockpot for this recipe. I use the Breville Fast Slow Pro Multi Function Cooker that I was lucky enough to receive as a gift. (Woo hoo!) This thing can work like a crockpot, or like a pressure cooker. If the Instant Pot had a posh big sister, this would be it. I LOVE mine. But you do not need a fancy-shmancy multi-cooker for this recipe. A (large) good old-fashioned crockpot will do the trick.
