Dairy-free Caesar Dressing (Paleo/AIP)

Salad dressing is one of the trickiest things to navigate on a healing diet. I mean, after you’ve tried every kind of vinaigrette out there, you can get a little… bored. 🙈 I bear no ill will toward a zesty vinaigrette! It’s just that sometimes, we want something at least a little creamy – minus dairy. Traditional Caesar dressing has egg in it, so for those on the AIP, that’s a double whammy! Fear not, though. I’ve got you covered.

So what IS in here?

The flavor elements that make Caesar dressing are present in this recipe. Many people don’t realize that anchovies are the secret ingredient. (Don’t be afraid. They add Omega 3s, and you won’t really notice them in here.) Garlic is the other big player in this dressing. I do love me some garlic! 😁

(NOTE: For the AIP elimination phase, omit the black pepper. It is a Stage 1 reintroduction. If you can tolerate it, by all means, add it in!)

How to serve it

Start with a base of chopped fresh Romaine lettuce that has been thoroughly washed. (I find it easiest to chop the lettuce first, then wash and dry it in a salad spinner.) Toss the lettuce with just enough dressing to moisten the leaves, keeping the rest of the dressing at the table for folks to add as desired.

I like to add peeled and seeded cucumber slices for crunch, then some kind of protein. I often have chicken on hand from making Falling-off-the-bone Crockpot Chicken, so I might use that. Grilled shrimp would also be fantastic.

If you have family members that don’t have issues with dairy, please, for their sake, shave some beautiful Parmigiano-Reggiano cheese on theirs. They will be grateful.
