These Piña Colada Popsicles (AIP/Paleo) are the perfect non-alcoholic, tropical treat to enjoy when temperatures soar! Easy to make, and vegan, too!
Summer calls to mind breezy afternoons, summer reading, and an easy, slower pace. But it’s also sometimes just… hot.
As I write this, we are expected to reach over 100º with a lovely blanket of steamy southern humidity on top. YUCK.
You know what would make it all better? POPSICLES! 😀 In case you were wondering, yes, grown-ups can have popsicles! Especially these Piña Colada Popsicles, which are non-alcoholic and sweetened only with fruit. Of course, being an AIP recipe, these are non-alcoholic, but I won’t stop you from adding something in there for adults. Just be sure you keep them away from the kids! Hmm, the alcohol may not freeze anyway…
What you’ll need
There’s only one piece of special equipment you’ll need to make these popsicles: silicone popsicle molds. Thankfully, popsicle molds have come a long way. The flexible silicone makes it much easier to remove your frozen treat without having to run the molds under water, or accidentally breaking the plastic. I use these right here.
You’ll also need a good blender. This is the one I use. It ain’t fancy, but it works and works and works. I love it.
