Frozen Monkey Bars (AIP/Paleo)

These Frozen Monkey Bars (AIP/Paleo) are an allergy-friendly, delicious treat! No gluten, dairy or nuts. They also happen to be vegan. Perfect for warm weather!

For the longest time, I’ve been dreaming of a frozen, dairy-free dessert that doesn’t have coconut milk in it. Like many of you, I have found that coconut and I are better left apart. ๐Ÿ˜ฌ I’ve seen people making “n’icecream” from bananas, so I thought I’d give it a whirl!

My friends at Singing Dog Vanilla asked me to create some summertime recipes, so I figured that this was now my chance. Yay! (I just love it when serendipity appears!)

To make Frozen Monkey Bars, simply bake the crumble crust, let it cool, whirl some stuff in a blender, pour it in and freeze. That’s it!

The particulars

You will need some equipment for this recipe, like a good blender. This is the one I use. It’s not fancy, but it is an absolute workhorse! You’ll also need a food processor for the crumble crust.

There are three ingredients that you might consider “specialty,” unless you’ve been on a healing diet for a while. You’ll need some tigernut flour for the crust. If you are avoiding chocolate, you’ll need carob powder. And of course, alcohol-free vanilla.

Ingredients

Directions

  • Preheat oven to 325ยบF. Line an 8.5″ X 4.5″ bread pan with parchment paper to the top of the pan. Set aside. Place dates, tigernut flour, 2 tablespoons carob powder, maple syrup, olive oil and salt in a food processor. Pulse until evenly crumbled.
  • Press crumbles firmly into the bottom of the bread pan. Bake for 15 minutes. Let cool completely.
  • Place bananas, water and vanilla in a blender. Turn blender to medium speed. While blender is running, add 2 tablespoons carob powder. Once it is fully blended, pour onto crust. Freeze uncovered for 8 hours, or overnight. Remove dessert by lifting parchment. Transfer to a cutting board. Cut into 4-6 bars with a sharp knife. Garnish as desired.

  2. Can I use Tapioca Starch flour to replace Tigernut?

    • Hi, Annemarie! Tapioca flour has a verrrrrry different consistency than tigernut. Tapioca can swap for arrowroot without too much difficulty, but not for tigernut, which has a lot of body to it, and inherent sweetness. Tapioca is too light and fluffy. Of course, I always encourage experimentation in the kitchen. Maybe youโ€™ll find a new way that works!

  3. I actually found Tigernut flour and used it instead. Have to tell you…as I was making this, I was “taste testing” the mixed results…I “was” going to throw it all away, as it was so bitter and icky. But, I didn’t want to loose all those good ingredients…so I continued on and froze it. The following night I cut myself a slice and sat down to eat it with regret. First bite and tears came to my eyes. My hubby asked if it was “that bad.” I laughingly/with tears said, “I FOUND MY NEW ICE CREAM!!!” It is SO yummy! Thank you Wendi for ALL you do for us Hashimoto peeps. You, my dear, are and angel!
