Like many of you, I am on a journey of healing from an autoimmune disease. When I was diagnosed with Hashimoto’s Thyroiditis, I was told that I would be on medication for the rest of my life, and there would be nothing I could do to affect my situation. I felt completely hopeless.
Then, I learned about the AIP diet (autoimmune protocol/autoimmune paleo). I learned that many people with autoimmune diseases have seen positive changes in their symptoms, just by changing the way they eat.
This intrigued me. I have always believed that what we eat reeeeeaaaaalllly matters, so it was only a small step for me to take on the idea that food could also be medicine. Thus began my AIP journey.
Now for a big ol’ disclaimer: I have zero medical training. I have not yet achieved a remission of all my symptoms, and I make no promises that anyone will be healed of an autoimmune disease. But I am doing everything I can to feel better.
The whole thing is a journey. Everyone goes at their own pace. Everyone’s body is unique, so what works for you, may not work for me, and vice versa.
These recipes are ones that I have developed, keeping to the ingredients allowed on the AIP. It is my hope that you won’t even notice anything special about them, that the people you feed will enjoy them, and that you will open up to a whole new way of eating. (OK, maybe those are some pretty big goals.)
