Before I get too far, I offer a caution about treats on the AIP part of AIP/Paleo. Those of us on the autoimmune protocol need to be cautious about treats. If we are filling up on treats rather than nutrient dense foods, we are not going to get too far in our healing.
That said, there are just times, people. We gotta have a little treat once in a while (OK, maybe I’m talking about me here), or we might get all deprive-y and woe-is-me-y, and become tempted to buy a tub of cookie dough and devour it with a side of Netflix. 😬
If you are craving a little something sweet, these are a great option! There is very little added sugar – just two tablespoons across the whole recipe.
Substitution FAQs
Can I just melt carob chips or chocolate chips and use that for the ganache? For AIP, nah. So far, the commercially available carob chips contain soy, which is avoided on the AIP. If you have successfully reintroduced chocolate, by all means, feel free to melt some soy free Enjoy Life Dark Chocolate Morsels
Can I sub cocoa powder for the carob powder? For AIP, only if you’ve successfully reintroduced it. If you do decide to sub cocoa, you may want to add some sweetness since carob is inherently sweet…
Can I sub another flour for the tigernut flour? Not if you want it to taste like cookie dough! Tigernut flour (not made from a nut) is a little sweet all by itself. For AIP, if you have successfully reintroduced nut or seed butters, you could use those instead of the cookie dough layer to save time, or to enjoy a different flavor.
Can I use something besides palm oil shortening? Coconut oil also works, but I think the shortening tastes more like cookies, and behaves better, too.
