A little alarm went off in my head, telling me that it’s time to post a treat recipe. YAY! 🥳

Before I get too far, I offer a caution about treats on the AIP part of AIP/Paleo. Those of us on the autoimmune protocol need to be cautious about treats. If we are filling up on treats rather than nutrient dense foods, we are not going to get too far in our healing.

That said, there are just times, people. We gotta have a little treat once in a while (OK, maybe I’m talking about me here), or we might get all deprive-y and woe-is-me-y, and become tempted to buy a tub of cookie dough and devour it with a side of Netflix. 😬

If you are craving a little something sweet, these are a great option! There is very little added sugar – just two tablespoons across the whole recipe.

Substitution FAQs

Can I just melt carob chips or chocolate chips and use that for the ganache? For AIP, nah. So far, the commercially available carob chips contain soy, which is avoided on the AIP. If you have successfully reintroduced chocolate, by all means, feel free to melt some soy free Enjoy Life Dark Chocolate Morsels for your ganache!

Can I sub cocoa powder for the carob powder? For AIP, only if you’ve successfully reintroduced it. If you do decide to sub cocoa, you may want to add some sweetness since carob is inherently sweet…

Can I sub another flour for the tigernut flour? Not if you want it to taste like cookie dough! Tigernut flour (not made from a nut) is a little sweet all by itself. For AIP, if you have successfully reintroduced nut or seed butters, you could use those instead of the cookie dough layer to save time, or to enjoy a different flavor.

Can I use something besides palm oil shortening? Coconut oil also works, but I think the shortening tastes more like cookies, and behaves better, too.

No-bake Banana Cookie Dough Bites (AIP/Paleo) provide a bit of sweetness without derailing your health. Make ’em with your kiddos!

Ingredients

Directions

  • Place a piece of parchment or wax paper on a cookie sheet. Place a cooling rack on top of that. Slice banana into about 12 slices 1/2″ thick, and place them on the cooling rack.
  • In a small bowl, stir together flour, melted shortening, salt, and vanilla until thoroughly combined. Set aside.
  • In another bowl, whisk together maple syrup, carob powder, and 1 tablespoon of water until it becomes a smooth syrup.
  • In a glass measuring cup, slowly melt together oil and softened coconut butter*. Do not overheat! Microwave 10 seconds, stir, then microwave perhaps another 10 seconds.
  • Gradually whisk the oil mixture into the carob mixture, bit at a time. As you continue to whisk, add 5 teaspoons of hot water, teaspoonful at a time until smooth.
  • Take a small glob of the fake cookie dough (maybe 1/2 teaspoon), roll into a ball, then flatten into a disk on a slice of banana. Repeat for all the other banana slices. Then drizzle all slices with carob ganache, making sure to completely cover the tops and sides of each bite. Garnish with some shredded coconut, if desired. Chill in the refrigerator for one hour.

Notes

  • Be sure to follow directions for the ganache precisely, or it might seize just like chocolate! It is not pretty when that happens. Believe me.
  • Coconut oil may be substituted for the melted palm shortening, but the shortening tastes and behaves better.
  • When using coconut butter, it is necessary to warm it and stir it before measuring. You can do this in a hot water bath, or gently in the microwave.

  1. Well these look adorable and yummy! My husband is addicted to your Minty Thins although we made a small change to them. We don’t dip them in the carob covering. We take vanilla icing from a different recipe and stuff it in the middle between two Minty Thins and they go into the freezer. They don’t actually freeze but they are cool and minty and like little minty Oreos. I have to admit, they never make it longer than a day or two in the freezer when I make them. Thank you so much for all of these lovely recipes!

  2. These are wonderful!!! Straight from the freezer is best, IMO. Don’t be afraid that these are too involved to make..the instructions are ON POINT and you can mix them up in a snap. I used coconut oil (actually the oil that comes to the top of the coconut butter) since I do not tolerate palm shortening. Deeee- lish!!!!!

    • Hi, Angie! Yes, you can absolutely do the melting on the stove. I haven’t done it, though, so I don’t have times for you. I would say to err on the side of caution. Melt softly and slowly. Note: to soften the coconut butter, a lot of folks put the jar in a warm water bath. Then stir and measure. Let me know how it goes! 😀
