I've always believed that what we eat reeeeaaalllly matters. I just didn't know how much until I was diagnosed with Hashimoto's Thyroiditis. Then I learned about Autoimmune Paleo (AIP). Turns out there IS something we can do to feel better!
🌱𝗠𝗲𝗱𝗶𝘁𝗲𝗿𝗿𝗮𝗻𝗲𝗮𝗻 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗭𝗼𝗼𝗱𝗹𝗲𝘀!🌱 These need to get in ma belleh right now! OK, so this is a creamy dish that uses spiralized zucchini instead of pasta, so it will not weigh you down. It has punch from lemon, basil and kalamata olives. And just when you think this dish couldn't be any better for you, we'll drop in a little fresh spinach at the last minute. 🙌🏻
🌱 Before changing my diet, I never knew I could consume so many fruits and veggies in one day. Now, it's my normal! 😀 We can challenge ourselves to add one more vegetable, here and there. You probably won't think about it after you eat it, but your body will remember - and thank you.

I know y'all looooove your poppers, so here's a perfect one for summer when basil is growing like a weed! Some of the lemon pesto goes in the poppers, and the rest is for dipping. Mm-MM! 😋
🌱 BTW, if you've never tried to make your own pesto sauce, pleeeease do yourself a giant favor and try it! The flavor is way better than store-bought, and it's better for you, too!

🌱𝗕𝗮𝘀𝗶𝗹 𝗣𝗲𝘀𝘁𝗼! 🌱 To me, this is the magic sauce that makes summer bearable. I mean, have you ever made pesto, and been nearly intoxicated by the aroma of that fresh basil??? OK, I'm prone to be a bit dramatic (former opera singer here 👋🏻), but seriously. The homemade stuff is SO GOOD.
🌱 If we are being technical, I should really be calling this stuff pistou because it doesn't have any cheese in it. Instead, it uses large flake nutritional yeast to suggest the flavor. Also, no pine nuts (because AIP). This recipe happens to be vegan, so it is suitable for most diet templates.
🌱 Of course, there are many things you can do with pesto. One of my favorite ways to use it is to make spaghetti squash, add cooked chicken, and mix in pesto. Oh my word! We're having that for dinner this week. 😋

💕You can make this recipe to suit your food sensitivities. Have you successfully reintroduced chocolate? Great! Use cocoa instead of carob! Can you do nuts? Awesome! Throw some in there. (Hence the “chunky” in the bars.)

🥗 𝗖𝗮𝗻𝘁𝗮𝗹𝗼𝘂𝗽𝗲 𝗮𝗻𝗱 𝗣𝗿𝗼𝘀𝗰𝗶𝘂𝘁𝘁𝗼 𝗦𝗮𝗹𝗮𝗱 was on the menu this week at our house, and it was so good that I wanted to share it with you! 😀 Summer is the time to snag a perfectly ripe cantaloupe for this dish.
🥗 My friend, who shall go by code name G (because the internet 😬), served us perfect slices of cantaloupe wrapped in prosciutto as an appetizer with a summery wine, and it was DIVINE. (Thank you, G! 💕) I re-imagined that here as a salad!
🥗 The base is fresh arugula, tossed in an herby dressing made with fresh oregano and capers. (Are you drooling yet?) Then, we'll add thin slices of red onion for zing, bits of prosciutto for saltiness, and juicy cantaloupe for a bit of sweet. All the notes! 🎶

🌱𝗖𝗿𝗲𝗮𝗺𝘆 𝗕𝗮𝘀𝗶𝗹 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗣𝗮𝘀𝘁𝗮! 🌱 How is your basil growing? I love fresh basil. The aroma is crazy! If you've never cooked with it before, please, please, for the love of all that is foodie, try it. Pesto made from it is to die for!
🌱 This is a real pasta dish because you can now get AIP-friendly pastas at the store! For this recipe, I prefer sweet potato noodles, aka "glass noodles," so called because they are transparent when you cook them.
🌱 To that pasta, we'll add a creamy pesto sauce, some chicken, and asparagus - before that goes out of season. My family eats this up, and nobody cares that it's AIP/Paleo!

🌱 Have you ever 𝗴𝗿𝗶𝗹𝗹𝗲𝗱 your peaches? Have you ever tried them with basil aioli??? 😍 OK, if you haven't tried that yet, go get you some juicy fresh peaches, and try this immediately!
🌱 Remember when I shared with you the recipe for this aioli? This is the magic sauce. Use just a little on your grilled peaches (too much can overpower the fruit), and save the rest for your burger, or whatever. Your breath will smell like garlic and you will have all the happiness.
🌱 Tip: look for "freestone" or "cling-free" peaches so that they are easier to pull apart.

🥧 𝗕𝗹𝗮𝗰𝗸𝗯𝗲𝗿𝗿𝘆 𝗣𝗲𝗮𝗰𝗵 𝗚𝗮𝗹𝗲𝘁𝘁𝗲! 🥧 Now is the perfect time to make this luscious dessert. The fruit is in season, and also, all the time is the perfect time to make dessert! 🙈
🥧 Seriously, though, do you ever have trouble with pie crust, especially AIP pie crust? It's definitely not the easiest thing in the world, is it? But a galette is a great way to 𝘱𝘳𝘢𝘤𝘵𝘪𝘤𝘦 pie crust! Why?
🥧 A galette is like a pie without having to carefully place a crust in a pie plate. It's a pie crust that you don't have to crimp. It's a pie that is deliberately rustic. Roll out the dough, add your filling right there on the parchment. Flop over the edges. If the edges break, smoosh them back together!
🥧 The galette you see pictured here is all those things. I mean, the crust broke. I stuck it back together. I promise you that NO ONE refused a piece on the grounds that it wasn't perfect! 😄
🥧 Fellow AIPers, you really can bake AIP! And if you can adjust your expectations, you will be even more successful. Enjoy the process - the rattle of measuring spoons, the weighing of the flour, the smells coming from the oven.
