Mediterranean Chicken Zoodles (AIP/Paleo) are a delicious non-dairy option to chicken alfredo. The sauce is great on regular pasta, too!

You guys, I think my tastes have changed after so many years on a nutrient dense diet. I actually prefer zoodles to regular pasta much of the time! And even weirder, so does Hubs, even when I give him the option of having regular pasta! You gotta understand, we were a pasta-eating family, once upon a time.
Beware! This could happen to you, too. Eat healthy long enough, and soon you’ll begin to actually crave vegetables. Don’t worry. It’s a good thing. ๐
For the uninitiated…
In case you have no idea what zoodles are, I’ll tell you. Zoodles are simply spiralized ribbons of zucchini. To make them, you only need a little gadget called a Veggetti. It is perfect for small soft vegetables. You just crank the zucchini through, and put the gadget in the dishwasher. Easy peasy. (Hard vegetables don’t do well here because they break. To spiralize things like carrots, sweet potatoes or butternut squash, you will need a heavy duty spiralizer
. I’ve linked the one I use here. It’s a little awkward, but it really does the job!)

Wait. Wine in an AIP recipe???
Don’t freak out about the wine in this recipe. It is allowed on the AIP, as long as it cooks off, which it does here. Of course, if you or someone in your house suffers from alcohol addiction, just leave it out.

One last thought: if you are just dying for pasta, there is now an AIP pasta on the market!!! It’s by the company Jovial. They make varieties of GF pasta, and now they have come out with an AIP-friendly one made with cassava! Check it out here.
