Oooooo, we love some curly fries, don’t we? Before I adopted an AIP/Paleo approach to eating, I was a happy consumer of a certain fast food restaurant’s roast beef sandwich with horsey sauce, accompanied by a generous portion of fried (in who-knows-what) seasoned potatoes, and washed down with a Diet Dr. Pepper. Mercy! 🙈
Oh how times have changed…
We learn and adjust. Nowadays, I’m all about these baked curly white sweet potatoes. Sure, we could just cut the sweet potatoes into sticks and be done with it, but where’s the fun in that? Let’s make ’em curly! They cook better this way anyway.
Of course, to curl these veggies, you’re going to need a spiralizer. This is the one I use. Spiralizers can be a bit awkward to use, but they do actually work. For softer, smaller vegetables like zucchini, I use a Veggetti. You can just hand crank them through. But for large, hard vegetables like sweet potatoes, beets, or squash, you definitely need the big weaponry. Spiralizing is a great way to get kids (and some picky adults) to eat their veggies!
Now – how to eat them? I think it’s fun to put the pan right in the middle of the table and let people snag a curly ribbon of veggie goodness. For a main dish, try these Blueberry BBQ Bison Burgers. Eliminate the white sweet potato buns, and serve these fries instead with the burgers as sliders. They cook in the oven.
