This Hearty Chicken Soup (AIP/Paleo) sports tender chunks of chicken in a creamy base with five different vegetables. Warming AND nourishing!

If you hang around me for any length of time, you will soon discover that I am a total soup girl. I love soup! Itโs the perfect one-dish meal. And if it contains homemade bone broth, we will receive some added nutritional benefits (e.g. collagen, vitamins, minerals).
About pressure cookers
FYI, this is a pressure cooker recipe. While I do not own an Instant Pot (mine was a gift, a Breville Fast Slow Pro Multicooker), I was able to use one while testing, so Iโll include slight variations in the instructions for different brands of pressure cooker.

I think I have made this recipe a half dozen times in one month. I made it for non-AIP family members, and they loved it. Not one person cast a sideward glance, or asked me what was in it. Everybody just gobbled it up โ and had seconds, too!
Veggie variety
Besides being delicious, warming and hearty, this soup has five different vegetables in it. (I am trying to get more diversity in my vegetable consumption. You? Itโs so easy to get stuck in a rut of sweet potatoesโฆ)

What about using a crock pot
Hi, Becky! That might work, if you do some of it on the stove first. I’d probably sear the chicken on the stove in some oil first, then place everything in the crockpot. Huge caveat: I haven’t tried it this way. I don’t know for sure what the result would be. If you do try it, please report back about how it went. Cheers!

Hi, Margarita! I have never tried it, but I do encourage experimentation in the kitchen! Maybe you could try cutting the thighs first to see if you like them in the soup. If that works, you can then try shredding, post cooking. Give it a go, and see if you like it. Lemme know how it goes!
I made it with chicken thighs and shredded them at the end. Amazing!
