Ladies and gentlemen, I beg you to try this easy-to-make side dish! No wait. It’s a dessert! No wait. It’s BOTH! 😁

Think of it like this. Remember those TV dinners with a small section of baked apples when you were a kid? Was that your side dish, or your dessert? It really could be either. That’s what we have going on here. These spiced, sweet plums are perfect next to pork or chicken, but they are equally good as a beautiful dessert, topped with, say, some non-dairy ice cream… (Note that the chopped hazelnuts I’m showing in the photo are for non-AIPers, or people who have successfully reintroduced nuts.)

Ingredient and equipment notes

Fortunately, almost all the ingredients for this recipe are readily available. For people on the autoimmune protocol, I do recommend Singing Dog Vanilla. (The alcohol cooks off.)

For equipment, it is always a good idea, IMO, to have an assortment of roasting trays. They are heavier than cookie sheets, and have a higher rim. A set of long tongs is also helpful.

These Simple Roasted Plums are versatile! Use them as a side dish for pork and chicken, or as a dessert with ice cream.

Ingredients

  • 2 TBSP 2 pure maple syrup

  • 1 TBSP 1 extra virgin olive oil

  • 1 tsp 1 ground cinnamon

  • 1 tsp 1 organic vanilla

  • 1/4 tsp 1/4 ground cloves

  • 1/8 tsp 1/8 sea salt

  • 4 4 ripe but firm red plums, washed, halved and pitted

Directions

  • Preheat oven to 400ºF. Line a rimmed roasting tray with parchment paper. In a large bowl, whisk together syrup, olive oil, cinnamon, vanilla, cloves and salt. Add plums to the bowl, and toss well with your hands to coat.
  • Arrange plums in a single layer on the prepared tray, cut side down. Drizzle remaining liquid from bowl over all. Bake for 5 minutes. Turn plums over with tongs, and bake for another 10-15 minutes. (They should have some body to them. Don’t let them get mushy.) Spoon any pan juices on plums. Serve as a side dish for chicken and pork, or as a dessert with non-dairy ice cream. Non-AIPers might appreciate chopped hazelnuts on top as shown.

Notes

  • This recipe yields 8 halves of plums, which could be 2 halves per person (4 servings), or 1 half per person (8 servings).
