Three Mocktails

One of the cruelest avoidances on the AIP diet, IMO, is that no alcohol is allowed.  I am a girl who very much enjoys the pairing of French wines and fine foods, a margarita and Mexican food, a burger and a beer, etc.  But my health is more important to me.  I have come to a place in my healing where I can occasionally enjoy a glass of wine with dinner, but I do feel a difference.

As necessity is the mother of invention, I came up with a few mocktail recipes so that I can enjoy a little something during mocktail hour.  Here are three of my faves.  (For fun, you can see me do all three recipes in one minute on this video.)  Cheers!

Grapefruit No-mosa                                            By wendisaipkitchen.com

  1. Fill a rocks glass halfway with ice.
  2. Pour lemon seltzer water to top of ice.
  3. Pour grapefruit juice to top.
  4. Stir.
  5. Garnish with mint.

(Note: You can muddle some mint in the glass if you like.  It’s a fun flavor.)

Blueberry Cos-mock-politan                        By wendisaipkitchen.com

  1. Fill a rocks glass halfway with ice.
  2. In a heat-safe bowl, microwave a generous handful of frozen blueberries for 30 seconds.
  3. Strain the blueberry reduction into the glass.
  4. Nearly fill the rest of the glass with lemon seltzer water.
  5. Squeeze in some lemon juice.
  6. Drizzle in just a bit of pure maple syrup.
  7. Stir.
  8. Garnish with a twist of lemon peel.

(Note: If you saw the video “Three Mocktails in a Minute,” you will note that this particular recipe didn’t go exactly as the above recipe.  Let’s move on…)

Pomegranate Mock-tini                                 By wendisaipkitchen.com

  1. Fill a rocks glass halfway with ice.
  2. Pour lemon seltzer water to the top of the ice.
  3. Pour pomegranate juice almost to top of glass.
  4. Add juice of half a lime.
  5. Stir.
  6. Garnish with a lime wheel.
