You already know how much I love soup. To me, it’s the perfect meal – protein and veggies in one bowl, and all I have to do is heat up some leftovers for lunch the next day. I searched for ideas for an Irish soup for St. Patrick’s Day, and saw many versions of Cabbage and Potato Soup. Well, I had to make an AIP/Paleo version!

So nourishing…

This soup is super easy, hearty, and gut healing. You need no special equipment, other than a good knife and a soup pot.

There aren’t any special ingredients either. You will need some good bone broth, however, because soup is only as good as the broth, IMO. If you’d like to make your own amazing bone broth, find my recipe and video here.

Irish Cabbage and Potato Soup is easy to make, nourishing, and soothing. It’s not just for St. Patrick’s Day, and you don’t have to be Irish to enjoy it!

Ingredients

  • 4 slices bacon, cut into 1/2″ pieces

  • 2 C. 2 chopped white sweet potatoes

  • 1 C. 1 chopped onions

  • 1 C. 1 chopped carrots

  • 1/2 C. 1/2 chopped celery

  • 1 tsp 1 sea salt, or to taste

  • 1/4 tsp 1/4 pepper (omit for elimination phase of AIP)

  • 2 C. 2 chopped cabbage

  • 4 C. 4 bone broth

Directions

  • In a soup pot over medium high heat, cook the bacon pieces until they are beginning to brown, about 6 minutes.
  • Add sweet potatoes, onions, carrots, celery, salt and pepper (if using). Sauté until vegetables begin to soften and onions are translucent, about 5 minutes.
  • Add cabbage, and stir for 2 minutes. It should be wilted.
  • Add broth. Simmer for 15 minutes. Serve! (Maybe with AIP/Paleo Irish Soda Bread?)

    Hi Wendy! I do not have white sweet potatoes in my area, so I was wondering if there is an alternative or is it something that can be left out of the soup and won’t be missed?

    • Hi, Layla! I know that white sweet potatoes can be hard to come by. See if you can find Japanese yams. These have a purple skin, but white flesh. They are a bit easier to find. You will need one or the other though. Good luck! 🙂
