Listen, friend. Treats are totally allowed on the AIP, but from my heart to yours, please keep them at a minimum. You’ve worked hard to get your healing where it needs to be, so proceed with caution, ok? OK.

Now then.

Let’s have some Easter fun! Try making some cookie pops! No it’s not hard. You just make your cookies as you normally would, and press your dough onto the stick before baking. Easy peasy!

Before I go any further, I need to address the elephant in the room – rather, the jellybeans in the photo. They are Trader Joe’s Gourmet Jelly Beans that are naturally colored, and therefore less bad for you than other jelly beans, but they are still not quite AIP. I include them here just because I like a pretty picture. 😁

Wait. Strawberry chips?

I’m sure you’re wondering about the strawberry chips. I’ve been having lots of fun playing with freeze-dried strawberries. I like to run these through my mini food processor until they are pretty much a powder. There will be some bigger chunks, so… voilà! Strawberry chips! No crummy ingredients! 😀 If you prefer not to use any kind of frosting on these, you can sift some of the strawberry powder on top of the cookies for a bright pink decoration.

This is a close view of a bunny cookie pop with its ears bitten off.
I can’t heeeaar youuuu!

More cookies!

I see. You’re a glutton for punishment. All righty then. Here are some more cookie recipes to try:

Have fun with these cookie pops, then jump right back into the veggies!

As always, I’m wishing you great love and deep healing.

💗,

Wendi

P.S. I don’t even want to talk about the duck. 🙈

Ingredients

Directions

  • Preheat oven to 350ºF. In a large mixing bowl, cream shortening. Add honey and vanilla. Cream again.
  • Place water in a cold saucepan. Sprinkle in gelatin. Let sit for 2 minutes to “bloom.” Place saucepan over medium low heat. Whisk gently until all gelatin has liquified. Turn off heat. Tip pan and whisk vigorously until frothy. Add immediately to the shortening mixture, and cream yet again.
  • Combine the rest of the ingredients (except decorations) in a bowl. Add to the shortening mixture, and stir to form a dough. Turn dough out onto a piece of parchment paper. Form it into a disk with your hands. Place another piece of parchment paper on top. Roll dough between the two sheets of parchment until it is 1/2″ thick.
  • Place cookie pop sticks on a cookie sheet, leaving plenty of room for the cookie shapes. Cut out shapes, and press them gently onto the sticks at least halfway up the dough shape. Bake for 8 minutes, or until golden brown. Let cool on the baking sheet, then remove them with a spatula (not by the stick!) to a cooling rack, or other work surface. Tie a ribbon on the stick, if desired, then decorate!

Notes

  • The jelly beans in the picture are Trader Joe’s Gourmet Jelly Beans that are naturally colored, and therefore less bad for you than other jelly beans, but they are still not quite AIP. I include them here just because I like a pretty picture. 😁
  • I have a basic decorating frosting recipe here. You can also get AIP frosting mixes from Eat GANGSTER here. Use code WENDISAIPKITCHEN to get 10% off your order! (affiliate)
  • Cookies will be more pink than the photo shows. I ran out of enough strawberries! Eek!
