These AIP/Paleo Strawberry Chip Cookie Pops are a fun decorating project, or a treat for a holiday. Of course, you can always just skip the stick, and eat them plain!

Listen, friend. Treats are totally allowed on the AIP, but from my heart to yours, please keep them at a minimum. You’ve worked hard to get your healing where it needs to be, so proceed with caution, ok? OK.
Now then.
Let’s have some Easter fun! Try making some cookie pops! No it’s not hard. You just make your cookies as you normally would, and press your dough onto the stick before baking. Easy peasy!
Before I go any further, I need to address the elephant in the room – rather, the jellybeans in the photo. They are Trader Joe’s Gourmet Jelly Beans that are naturally colored, and therefore less bad for you than other jelly beans, but they are still not quite AIP. I include them here just because I like a pretty picture. 😁
Wait. Strawberry chips?
I’m sure you’re wondering about the strawberry chips. I’ve been having lots of fun playing with freeze-dried strawberries. I like to run these through my mini food processor until they are pretty much a powder. There will be some bigger chunks, so… voilà! Strawberry chips! No crummy ingredients! 😀 If you prefer not to use any kind of frosting on these, you can sift some of the strawberry powder on top of the cookies for a bright pink decoration.
