These AIP/Paleo Ranch Chicken Nuggets make it possible to have a fun meal that’s actually good for you! Serve them with crunchy raw veggies.

Yes! It is possible to have your chicken nuggets without the questionable ingredients that are usually in those handy little bites! As you may have guessed, we’ll have to use a bit of culinary chicanery (oo, I love that word) to get the crunchy ranch-flavored coating, but it is very possible.
That coating…?
Yeah, so it’s cereal. You heard me. Since we’re not using any gluten, dairy, nuts, seeds, eggs, etc., we’ll have to improvise a bit on the coating. We’ll use some crushed, unsweetened Lovebird cereal as panko. Lovebird is a fairly new company whose mission it is to clean up the cereal industry. Of course, you can eat the cereal just as cereal. I enjoy it as an occasional snack. They have unsweetened, honey, and cinnamon varieties. For this recipe, we’ll use the plain, unsweetened.

Serving suggestions
You really don’t need fries to accompany your nuggets. I ate this (above) for dinner when I was done taking the photo! (Note: the sugar snap peas are a Stage 1 reintroduction.) However, here are some AIP/Paleo fries and other serving suggestions:
