Prosciutto Chicken and Sweet Potatoes is a sheet pan recipe, not just for people on the AIP/Paleo, but for everyone! It’s easy and requires little cleanup.

You probably already know about the ease and convenience of sheet pan recipes. I, however, am extremely late to the party. Nevertheless, I have arrived. How wonderful it is to toss everything on one pan, throw it in the oven, then put your feet up while it is cooking. At the end of the meal, there is minimal cleanup, which for me is probably the second best part about it. (Food bloggers do a TON of dishes, y’all. I tell you WHUT. 😳)
Ingredients
Look at all those colors! Now, do you have to use three different colors of sweet potato? No, but it makes the dish look prettier, and I believe with all my heart that the more variety we can get in our diet, the better.

Prosciutto is readily available in grocery stores, but if you are in the elimination phase of AIP, source prosciutto that is only pork and salt. Some prosciutto has other ingredients that are not AIP-friendly. (Mine has pepper in it, but I’ve successfully re-introduced pepper.) Choose your prosciutto with care.
Equipment
Fortunately, you don’t need much equipment for a sheet pan recipe – mostly just a good knife. You will, however, need a half sheet pan. Mine gets SO much use. If you don’t have one, consider adding one to your equipment repertoire.
