Corn-free Tortilla Chips

When I started eating a healing diet, one which eliminated corn, I was pretty bummed about not having tortilla chips and salsa or guacamole. There were plantain chips on the market, but it just wasn’t the same. And tortillas? Nope, none that I could just buy at the store.

Happily, the world is opening up to people who have dietary issues! There’s even a real tortilla for purchase!

And the angels sang.

Now about those tortillas

I can hear you through your screen saying, “Wendi, where do you find a fully AIP tortilla for purchase???”

OK, friend. Here’s the scoop. These are cassava tortillas made by the company Siete. If you have a Whole Foods Market near you, you may be in luck. They are in the cold case near the salads in my store. They can be purchased on the company’s website, or here on Amazon, but they are mighty expensive. At the time of this writing, you can only purchase 6-packs in multiples of six (36 tortillas) on Amazon for $108! The company’s website is a little cheaper, but it’s the same story – six 6-packs. Maybe one day, the price will lower, or they will sell them individually.

I will say, though, that Siete does have their own brand of grain free tortilla chips that you can use, if you have successfully reintroduced seeds. (They contain chia seeds.)

These Corn-free Tortilla Chips are AIP and Paleo! Enjoy the crunch and fun of dipping your chips once again!

Ingredients

Directions

  • Preheat oven broiler to high. Fit a cooking tray with a roasting rack. Place tortilla on rack. Brush with half the olive oil.
  • In a small bowl, mix the rest of the ingredients. Sprinkle with half all over one side of the burrito. (SEE NOTE.)
  • Broil 6″ from the broiler until golden, about 2 minutes. Remove from oven. Flip tortilla with tongs. Brush the other side with oil and sprinkle with remaining seasonings. (Again, see note.) Place back under the broiler until crispy, about 1 minute or less. Watch carefully! Ovens vary.
  • Remove from oven. Let cool. When tortilla is cool enough to handle, break into odd sizes and shapes. Dig in!

Notes

  • Important: There is a lot of seasoning here. You may wish to start with a light hand with the seasonings, and work your way up to an amount of seasoning that is just right for you. The amount I’ve indicated here will yield a pretty salty and seasoned chip!
